I never prefer vinegar and oil when it is about making salads. Of Course, that was until I found the flavor of fine balsamic vinegars. As far as I’m concerned, the words tart and vinegar were identical. But my point of view was changed so quickly when I first relish the flavor of a 25 year old Balsamic vinegar. I was really shocked to savor the the sweet, smooth, dark colored fluid for the very first time. Was this a vinegar? I asked myself more than hundred times!
